Vegan Blueberry Lemon Loaf Cake

250g self-raising flour
150g caster sugar
half teaspoon baking powder
half tsp bicarbonate of soda
220 ml rice milk
120 ml rapeseed oil
juice of 1 lemon + grated zest of 1 lemon
1 tsp vanilla essence
100 g blueberries
for the glaze:
120g icing sugar, 1 tbsp rice milk, 2 tbsp lemon juice
Grease a loaf tin and preheat oven to 180
Stir the flour, sugar, baking powder and bicarbonate of soda together until thoroughly mixed. Add the milk, oil, lemon zest and juice and vanilla and mix together until just combined. Gently fold in the blueberries
Spoon the batter into the prepared loaf tin and bake for 30-35 min. Remove and cool for 10-15 min.

Vegan Cinnamon & Chocolate/Vanilla Cake

summer 2023 cake frenzy, baked a hella lot of cakes to try out recipes 

2 ½ cups all-purpose plain flour
1 cup granulated sugar
3 teaspoons baking powder
Pinch of salt
1 ¼ cup dairy-free milk
½ cup neutral flavored oil
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract

Streusel topping> brown sugar + cinnamon (option, add vegan butter)
Cinnamon Swirl> brown sugar and cinnamon (option  dairy-free milk)
Add all the dry ingredients, mix, then add all the wet ingredients to the bowl and mix, not too much.  Preheat the oven to 180°C, bake 30 minutes. 
The Vegan Chocolate/vanilla cake recipe: Dry Ingredients: 2 ½ cups all-purpose plain flour, 1 cup white sugar, 3 teaspoons baking powder, ¼ teaspoon baking soda, pinch of salt, optional. Wet Ingredients: 1 cup dairy-free milk, ½ cup neutral flavored oil, 1 tablespoon apple cider vinegar, 1 teaspoon vanilla extract. Mix dry first then wet, and add chocolate snippets. Bake 40 minutes in preheated oven 180°C (350°F). Finish with chocolate glaze

You'll be making a chocolate, vanilla and strawberry batter, and also chocolate, vanilla and strawberry icing. The batter recipe and instructions are perfect, but with the icings waaaaaaaaaaaaaaaaaaaaaay too much sugar is written down. Which is very obvious at first glance of the recipe, because 750 gram sugar for 1 icing is insanity.

So what concerns the icings; make HALF of the numbers mentioned, no more. It will still be a lot. And cut down on the sugar even more. Where is written 750 gram I used.. 50 and it was still sweet. - 2021

2023 July. Preheat your oven to 180 degrees c and line a loaf tin with  greaseproof paper. In a bowl large mixing bowl, combine the flour, baking powder, caster sugar and lemon zest. In a separate bowl, combine the oil, water and lemon juice.  Pour the wet mixture into the dry and mix until combined, then pour evenly into the lined tin. Pop into the oven and bake for 30 minutes or until golden brown. 

Vegan lemon loaf

275g of self-raising flour
1 teaspoon of baking powder
80g of caster sugar (less than in original recipe)
zest of 1 large lemon
100ml of sunflower oil
170g of water
juice of large lemon

Ingredients for the frosting:
2 tablespoons of dairy-free butter
2 tablespoons of dairy-free cream cheese 
300g of icing sugar
1 teaspoon of vanilla extract

For the sauce that you spread between the vegetable mix and the cheese sauce on the lasagna leaves: walnuts, pine nuts, spinach, lemon, garlic, nutritional yeast, olive oil and water (blend) 

Vegan Sweet Potato Cake

Wet ingredients for sweet potato cake

1 ¼ cups (250g) sweet potato puree
1 ½ cups (310g) dairy-free milk
½ cup (125g) neutral flavored oil
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract

Dry ingredients for sweet potato cake
3 cups (375g) all-purpose plain flour
1 cup (160g) packed brown sugar, or coconut sugar
3 teaspoons pumpkin pie spice
3 teaspoons baking powder
½ teaspoon baking soda
Pinch of salt

Cream cheese frosting:  120g vegan cream cheese, 115g vegan butter, 200g powdered sugar 

Add all the wet ingredients to a large mixing bowl and mix until there are no lumps. Add all the dry ingredients to the bowl and mix until there are no pockets of flour or wet ingredients. Be careful to not overmix the batter

Preheat the oven to 180°C (350°F)., bake 30 minutes.

Kindvriendelijke (en diervriendelijke) makkelijke vegan koek recepten om samen te maken

150 grams of vegan butter
150 grams of white caster sugar
Mix 3 teaspoons of no egg with 6 tablespoons of water
150 grams of flour
1 pinch of salt
(mix butter with sugar, then add egg replacer mixture, then flour and salt - bake at 175°C)

(cookies recipe, 15 min baking, 160°C )
250 grams of flour
150 grams of vegan butter
70 grams of sugar
cut dough in half, add 2 tablespoons of vanilla extract in one, 2 tablespoons of cacao in the other. mix, roll, bake 

Summer salad

Cut floury potatoes into wedges and let them cool. When they have cooled, add olive oil, wine vinegar, salt and pepper to taste and iceberg and/or rocket salad. Store in refrigerator. Nice and fresh and light on the stomach on hot summer days.

How To Make Donuts

Vegan Blueberry Muffins

Even a blackbird and a rooster were beyond happy with these muffins 😘 

300 grams all purpose flour
150 grams of caster sugar
2 sachets of vanilla sugar
1 modest tablespoon of baking powder
1/2 teaspoon of salt
120 ml natural almond yogurt
120 ml soy milk unsweetened
120 ml of rapeseed oil
180 grams of blueberries
Bake for 30 min at 180 degrees (mix the dry ingredients, then add all the wet ingredients (last add berries) and stir very briefly until blended)

To enrich the cupcakes, add crumble on top of them before putting them in the oven. You will need 25 gram brown sugar, 20 gram ground almonds, 25 gram margarine (dairy free) and 50 gram plain flour. Mix this till it's lumpy.

Same recipe as used for the Vegan Blueberry Muffins can be used for Peach. Cherries. And so on. Kids tried the muffin and recipe out too and found it easy and tasty

Vegan Banana Bread

2 medium bananas
3 tablespoons maple syrup
1 tbsp nut butter
200 ml plant-based milk
215 g flour
1 tsp cinnamon
2 tsp baking powder

Streusel: 65 g flour, 3 tbsp tahini, 3 tbsp maple syrup,
1 tsp cinnamon

Mash the bananas, then add all ingredients in the bowl, stir by hand. Pour into cake tin. Then put all ingredients for streusel in new bowl, when mixed add on top of the batter in cake tin. That's all folks! Bake at 180 Celsius/360 Fahrenheit for 60-70 minutes and cover the Streusel to prevent them from burning. Recipe from

Vegan Walnut Chocolate Banana Loaf

Another great recipe from the Naughty Cakes book, but once again I have halved the sugar. Otherwise you will quickly go into diabetes/obesity with those huge amounts of prescribed sugar.

250g self-raising flour
1 tsp baking powder + 1 tsp bicarbonate of soda
75g light brown sugar
250 ml rice milk
100 ml rapeseed oil
3 bananas
2 tsp vanilla extract
50 g chocolate chips
100g walnut pieces
(180 g or gas4 oven 30-35 min, use baking paper in tin)
Stir the flour, baking powder and bicarbonate together and add in the sugar.
Mix the milk, oil, bananas and vanilla until JUST combined, add chocolate and walnut at the end.
Cool for 15 min in the tin, then take out of tin to cool completely.

You cannot go buy 'free-range' eggs in the store because they lie.

On the picture above you can see the insane ammount of eggs my parents had when they had chickens. But these walked freely outside. You do not cage them, do not withhold their right to see daylight, smell grass.

2 glass of sparkling water  (7up)
2 pinches of table salt
2 good teaspoons of cocoa

My bestie from the UK (Spongebob) sent me a baking cookbook (and animal friendly bag and roses mugs). Once you tasted a blueberry muffin, you will try them again. So I tried.. the muffin recipe. It is so rich I will not share the recipe though. Unless your aiming to get fat fast.

Vegan Tijgerprint Cupcakes

Makkelijk, snel, vegan. Kan niet mislukken, 180 graden, 25 min baktijd.
1pk Koopmans boerencake mix
200 ml soja melk
120 ml zonnebloem olie
1 zakje vanillesuiker 

Vegan Sesame Cookies

(vegan spritsen met sesamzaad erin en maanzaad erop)

225 gr vegan butter
125 gr white caster sugar
1 teaspoon lemon zest
1/4 teaspoon of salt
2 tablespoons of soy milk
275 gr flour

Bake for 25 minutes at 160 degrees (rubbing dough: mix butter, sugar, lemon and salt, then add milk, then the flour)

Add sesame seed in the batter. Like a lot. And sprinkle with poppy seeds.

On the picture I added on top and some underneath chocolate. Too sweet, stick with the seeds only.


250 g self-raising flour
200ml water
2 tbsp vegetable butter
2 tbsp coconut blossom sugar
1 pinch of salt

Heat the water in a pan with the sugar, butter and salt. Bring it to a boil and keep stirring until the sugar has dissolved. Then remove the pan from the heat and stir in the flour. The dough should become firm. let it cool for a while, then in a piping bag.

Make strips of about 7 cm, place 4 or 5 in the pan with oil and deep-fry them. Drain on kitchen paper and sprinkle with sugar.(>coconut blossom sugar or a mix of dark brown sugar, fine sugar and cinnamon)

Surinamese cornstarch cookies 

125 grams of vegetable butter
100 grams caster sugar
1 teaspoon vanilla extract
1 tsp Orgran No egg natural egg replacer
pinch of salt
250 grams cornflour

Mix butter, sugar and vanilla until combined. Then add the egg mix and the salt. Then the cornstarch. Knead it into a sticky ball, add water as needed and then knead the batter into balls. Press it down with a fork dipped in cornflour on a baking sheet. Dab cookies with a little water and sprinkle some colored musket seeds over them. Bake at 175°C
